My mother used to make this wonderful loaf. It is a recipe which comes from Canada and it is said it can be persuaded to enhance many different kinds of meals. At its simplest it is spread with butter or margarine and served instead of ordinary bread and butter at tea time.
For breakfast it makes the most delicious toast that anyone ever spread with marmalade.Sliced thinly it can be taken on a picnic or served at a party. When it is a little stale it can be turned into a bread and butter pudding.
1 lb Self Raising Flour; 1 teasp. salt.
8 oz sugar.
2 tablespoons melted butter or margarine
2 tablespoons grated orange rind (I usually add some juice from the orange as well)
half a cupful of marmalade
1 Egg
1 1/2 cups Milk.
Sieve the flour, salt and sugar into a basin.
Beat the egg, mix with the milk and stir this mixture into the dry ingredients with a knife.
Stir in also the grated orange rind, the melted butter, small amount of orange juice, and the marmalade.
Put the mixture into a well greased loaf tin.
Let it rise in a warm place for 20 minutes and bake for 50 minutes in a moderate oven.
